Our sparkling is made in the Charmant style with fermentation occurring in a tank rather than a bottle like traditional champagne and sparkling wines. Our bubbles are made from equal part Semillon and Aleatico grapes. These grapes are harvested and fermented along with all our other wines during the vintage but kept at a lower alcohol. Then we send it over to our friends in Lodi who tank the wine and add a little bit of yeast and some sugar to feed the yeast and get our bubbles. This delightful sparkling wine presents as a soft pale yellow and small bubbled refreshment. The nose is a fragrant aroma of crisp apples and hints of white flowers with notes of night blooming jasmine. The palate opens with a lovely spark of apples, soft juicy ripe pears, with a lengthy finish of lemon and gentle passion fruit.
